Hi! I'm Kelsey White, founder of Full Table Consulting.

 

I'm a certified Vegan Hospitality Consultant with years of food service and management experience, ​but this work isn't really about vegan food.​ It's about hospitality.

While working at a no-kill animal shelter in Austin, Texas, I began thinking more deeply about my relationship with food. That journey eventually led me to explore plant-based cooking and completely changed the way I thought about hospitality. I began to experience firsthand the difference between being accommodated vs being considered.

A few years later, I experienced a serious tick-borne illness. I gained an even deeper understanding for how isolating it can feel when there aren't many options that meet your needs. That experience reinforced something I already believed: thoughtful menus aren't just about the food—they're about making people feel welcome.

Most restaurants aren't missing thoughtful plant-based options because they don't care. They're missing them because they're busy. Between staffing, inventory, food costs, and the day-to-day demands of running a restaurant, developing new menu offerings often falls to the bottom of the list.

That's where I come in.

My goal is to help restaurants welcome more guests without changing what already makes them special. Through thoughtful plant-based menu development, team training, and rollout support, I work alongside restaurant owners to create dishes that fit seamlessly into their existing operations—practical to execute, aligned with their concept, and genuinely appealing to a wide range of guests.

Because menus can either make people feel like an afterthought or like they were expected all along.

Outside of consulting, I work part-time as a manager at a local health food store. I also enjoy traveling, board games, sunshine, and playing music. But nothing beats spending time on my land in the Boston Mountains, where you'll find me building trails, exploring the woods, or cooling off in the creek with my dogs.
